Whilst we are known for our English sparkling wine here at Hattingley Valley, our bestselling Entice is back for another vintage, and we couldn’t be more excited about this! 

The question is "how do you make dessert wine in England and the very short answer is, ‘With difficulty’. Many dessert wines from around the world are simply left on the vine for longer periods to accumulate more sugar and in the case of ice wines, they are left out until the grapes are frozen. If we tried that here, we would produce a lovely bottle of rot. Therefore, we harvest the grapes at a higher than usual sugar ripeness (so we leave them out for a bit longer than normal, weather permitting) then we put around 4 tonnes of Bacchus grapes in our walk-in freezer where they stay at minus 10 degrees for two weeks. Once the usual harvest is over, we take the frozen grapes out, put them in our press and press them extremely gently to extract the juice.

Only possible to make when we have an outstanding vintage (2022 was an exceptional year for English wine), this Bacchus wine was made with grapes harvested from our vineyards. This delectable dessert wine is our take on ice wine (or Eiswien as it is known in Germany) and pairs perfectly with blue cheese such as Shropshire Blue, ‘Faux Gras’ or a classic English dessert such as a Summer Pudding or a classic Bread and Butter pudding.

Pale lemon-gold in colour, this decadent dessert wine has vibrant aromas of tropical fruits and blossom. Beautiful notes of elderflower and lemon on the palate with a delicious honeyed character and a creamy mouthfeel. Its crisp acidity balances perfectly with the natural sweetness of the Bacchus grapes, leading to a pure, elegant and refreshing finish.

Food Pairing

Served well chilled, this is a luscious drink that can be paired with blue cheese, foie gras or a classic Summer Pudding after a meal.

Harvest

2022 was undoubtedly an unusual year. The long and warm growing season saw more than double the average sunshine hours, surprisingly hot days and no rain, with drought being recorded at some sites. The result was high yields free of disease and very ripe fruit, full of flavours and good acid levels.

Winemaking

A very limited release, this elegant handcrafted English dessert wine is made from 100% Bacchus grapes in an ice-wine style. The grapes were hand-picked and frozen to -18°C for 16 days. After that period, and whilst still frozen, the grapes were slowly pressed in our Coquard press for approximately 48 hours, leaving most of the water behind as ice. The result was a viscous, concentrated and quintessential juice with naturally high sugar content. This went through a long cool fermentation process in a stainless steel tank to maintain the pure fruit expression and freshness. The high sugars cause the fermentation to cease
early, leaving relatively low alcohol and high residual sugar.

As good as the 2014 one

The 2022 Entice dessert wine is really excellent. We tasted the 2014 Entice dessert wine in the Chesil Rectory in Winchester. We thought it was outstanding with a distinct elderflower aroma. The next three Entices although were good, didn’t fulfil the expectation of the first one. The 2022 Entice is outstanding and equal to the 2014 one.
