Simon originally didn’t want to make a rose as he didn’t think it was a ‘serious wine’. However, once Emma won the Champagne & Sparkling Wine World Championship Award for ‘Best Vintage Rose in the world’, he soon changed his mind! Ironically, this is now Simon’s favourite wine in the range and also Emma’s favourite to make, so, we are pretty sure you will like it too.

The 2015 growing season was a test of good site selection and our vineyard team did a wonderful job in challenging conditions - the summer was cooler than the previous year, particularly in August which is the crucial month for veraison and the start of the ripening season. The pinots were super-ripe with wonderful flavours, good acidity levels and deep colour.
A ‘sleeper’ vintage – 2015 didn’t immediately promise great things but this wine has developed to be my favourite ever Rose.’
The Pinot Noir and Pinot Meunier grapes were hand-harvested and whole-bunch pressed, with approximately 12% of the blend being fermented in old white Burgundy barrels, and partial malolactic fermentation took place in order to soften the wine’s natural acidity. This blend is completed with 2% of Pinot Précoce (having been vinified as a still red wine), giving this Rosé extra colour, body and flavour. The wine undergoes a second fermentation in bottle and ageing on its lees for 37 months before disgorging with 9g/L dosage.
This elegant Rosé has a subtle delicate salmon hue and a soft mousse, with bright red fruit and summer berry aromas. On the palate, delicious strawberry coulis flavours, creamy texture and fine toasty notes. A harmonious wine, with extraordinary depth, freshness and perfectly balanced acidity.
We enjoy our Rosé with Cherrystone Clam Chowder served with freshly baked bread.

I organised a bottle of the Hattingley sparkling rosé to be sent to friends at their new house at it arrived punctually and was very much enjoyed!
